Recipe for 'Irish Barmbrack' by 'Loftus'

Barmbrack For Halloween

250g white flour
15g dried bakers yeast
50g white fine sugar
100mls warm milk
Half teaspoon of allspice or mixed cinnamon and nutmeg
Half teaspoon of salt
1 small egg
50g of unsalted butter
50g mixed peel
60g mixed raisins and sultanas

Soak the dried fruit overnight in weak tea
Warm the milk, stir in yeast and one teaspoon of sugar into two tablespoons of milk, let rise for 10min:
Melt butter and let cool.
Sift flour and spice salt into bowl, add rest of sugar.
Pour in rest of milk and yeast mixture as before.
Beat egg with fork, mix in butter, add to bowl, stir a little and knead mixture for 5min until the dough is elastic and no longer sticks to bowl.
Cover with a wet cloth and let rise for one hour in a warm place.
Dry the mixed fruit chop in small sections roll in a little flour add peel and mixed fruit and knead vigorously.
Butter a baking tin and spread the mixture evenly into it, leave to rise for 30min:
Heat oven to 200c bake for 25mins: then reduce temp: to 190c and bake just a little longer.
Let the Barmbrack rest for 15min: after taking out and extracting from tin. Allow to cool before cutting. Serve with butter.
