Recipe for 'Irish Soda Bread' by 'Loftus'

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp Bicarbonate soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Preheat oven 200c/gas6/fan 180.
Dust baking sheet with flour. Mix dry ingredients in a large bowl then rub in butter.
Pour in Buttermilk and mix quickly with table knife, then bring dough together very lightly with fingertips. [handle gently]
Now shape into flat round loaf measuring "8"in diameter.
Put loaf on a baking sheet and score a deep cross in top, this helps bread to cook through.
Bake for 30-35 min: until the bottom of the loaf sounds hollow,when tapped
If not ready turn upside down and bake a few more min:
Transfer to rack, cover with a clean tea towel. This helps keep the crust nice and soft.
